The Restaurateur Behind Jora Peruvian Is Debuting a New Concept in Los Altos

According to a recently submitted alcohol license application, one of the restaurateurs behind Jora Peruvian Food — a concept located at San Pedro Square Market in San Jose — plans to debut a new eatery in Los Altos.

Coming to 376 1st StreetCallao Restaurant — as it’s listed on the filing — will land near establishments such as Bluestone Lane Cafe and The Original Pancake House, as well as Shoup Park.

For readers who are unfamiliar with Jora Peruvian Food, the restaurant’s founders, Juan Carlos Sosaya and Arturo Bazán, share their inspiration for starting the business: “We cook as if we’re cooking for family. We remember making fresh ceviche from fish caught back home. Our recipes remind us of Peru where we were born and raised. We also draw inspiration from all of our experience in the restaurant industry.”

In addition to ceviche, Jora offers menu items such as a pork and sweet potato sandwich, anticuchos, and carapulcra.

Whether Callao will follow suit cuisine-wise has not yet been made clear, and an opening date has not been announced. Stay tuned for updates.
