Bay Area omakase sushi pop-up Sushi Salon is planning to debut its first brick-and-mortar location in Oakland, according to the eatery’s website.

For readers who are unfamiliar with the Sushi Salon, it has become known in the Bay Area for its fresh ingredients and attention to detail. Founded by Joji Nonaka and Anna Osawa, the concept currently operates out of Fish & Bird Sousaku Izakaya in Berkeley.
“Our chef Joji Nonaka sources the majority of the fish we use through Mr. Hiroki Hasegawa, a well-known fish concierge,” the pair share on the Sushi Salon website, adding, “Mr. Hasegawa uses a special technique called Shinkei Jime in order to preserve the quality of the fish.”
For readers who are unfamiliar with the practice, Shinkei jime is a Japanese technique “that involves paralyzing the fish through its spinal cord in order to delay its rigor mortis by an entire day, resulting in the fish staying fresh and preserving its depth in flavor” — and Sushi Salon is the only restaurant in the U.S that use Shinkei-jume fish.
