The restaurateur behind Pleasanton’s Sabio on Main — an eatery and wine bar known for seasonal California cuisine — plans to debut a new concept in the city, Pivot, according to a recent license application.

Coming to 5121 Hopyard Road, the restaurant will land near Black Bear Diner, Four Points by Sheraton, and MRC Smart Technology Solutions.

What Now San Francisco contacted Pivot’s owner and “serial technology entrepreneur,” Jim McDonnell, to inquire about the upcoming eatery, but he could not provide additional information before publication.

For readers who are unfamiliar with Sabio on Main, the concept was founded in 2015 and is a collaboration between McDonnell and Chef Francis X. Hogan, “a certified member of the butcher’s guild, cheese specialist and Level 1-certified sommelier from the Court of Master Sommeliers.” 

“The relationships I have with my farmers, ranchers, and fishermen are the foundation of everything we do at Sabio. Without their tireless dedication we couldn’t accomplish our goal of serving the best quality, sustainable, seasonal ingredients in an innovative yet familiar style,” Hogan shares on the Sabio website. 

It’s still unclear whether Hogan will be part of the Pivot team, and the concept’s menu and anticipated opening date have yet to be announced.
