Napa Valley business Theorem Vineyards — the owner of numerous estates and vineyards throughout California and Montana — plans to debut a new concept in Downtown Calistoga, according to a recently submitted license application.

The yet-to-be-named restaurant will take over a two-story, 4,700-square-foot space at 1364 Lincoln Avenue that was formerly home to Bosko’s Trattoria — near eateries such as Bricco Osteria, Evangeline, and Susie’s Bar.
For readers who are unfamiliar with Theorem Vineyards, the business was established in 2012 by trial lawyer Jason Itkin and his wife and the winery’s president, Kisha Itkin. Known for offering guests a high-end luxury experience, Theorem operates a 60-acre estate on Diamond Mountain, a 34-acre estate in the Moon Mountain winemaking district, and a 12,400-acre cattle ranch in Montana called Theorem Ranch.
The name of the upcoming Calistoga eatery and an anticipated opening date have not yet been announced, so stay tuned for updates.
