An exciting new concept is arriving shortly from the newly-formed Flour + Water Hospitality Group. It’s called Penny Roma and it’s slated to open up at 3000 20th Street later in October.

Flour + Water Hospitality was founded by co-chefs Thomas McNaughton and Ryan Pollnow, and their partners Kara Bratcher, Vanya Shekell, and David Steele. Describing themselves as a “culture-driven hospitality group”, Flour + Water has dedicated itself to “creating stand-out culinary experiences that reflect the leadership’s shared commitment to quality, community impact and transparency”.
Ryan and Thomas opened the original Flour + Water in 2009 and quickly cultivated a positive reputation, establishing the new team as industry leaders shortly after launching their first concept. The team only grew from there and would go on to open Flour + Water Pasta Shop, expanding their influence and establishing the team as the leading hospitality group on 20th Street.
Penny Roma is the latest development in the team’s ambitious domination of 20th street. Flour + Water Hospitality describe Penny Roma as “an essential new neighborhood destination for approachable pastas and seasonally-driven rustic Italian fare”. Guests can expect traditional staples such as casio e pepe, bistecca alla florentina, as well as contorni that showcase seasonable vegetables from local farm partners.
To celebrate the new restaurant, Flour + Water Pasta Shop will be debuting an evening enoteca menu (wine library) to compliment its specialty sandwich offerings. Guests will also be able to sign up for the Flour + Water Wine Club to receive monthly alerts showcasing four of the best wines from micro-producers in the region.
Sadly, while Penny Roma is expected to open in mid-October, the original Flour + Water will be temporarily closing down for renovations, expecting to open back up in the Spring of 2022. The current Flour + Water will serve its last customers on October 2nd, before the team begins undertaking the redesign. Thankfully, Penny Roma will be ready to launch by the time you start to miss Flour + Water, so be sure to check it out when it opens.
