According to the San Francisco Business Times, a new Thai restaurant and bar is coming to the 1800 Sutter Street inn — taking over a space formerly home to the shabu-shabu concept Mums.

The journal shares that Chef Naruephon “Billie” Wannajaro of Hed Verythai in the Financial District is behind the yet-to-be-named concept, citing that she “recently registered an LLC at the hotel’s address.”

What Now San Francisco reached out to Wannajaro to inquire about the upcoming restaurant, but she could not provide additional information before publication.

Nevertheless, should the hotel restaurant follow in Hed Verythai’s footsteps, locals can expect traditional Thai cuisine prepared with a focus on balancing textures and flavors.

“Khao gaeng is a typical way of eating a perfect meal in Thai culture,” Hed Verythai shares on its website, introducing its priority when preparing dishes.

Within one single meal—and oftentimes with only one plate—you get to taste different dishes with flavors and textures that complement themselves. Rice sits in the center as [the] main and a small portion of two to three stir-fries, soups, curries, or fried items are served alongside,” the statement continues.

Wannajaro’s concept at Kimpton Hotel Enso is slated to open in early summer. Stay tuned for updates.
