The business will take over the former Here Comes the Sun space at 8455 North Cabrillo Highway in Montara — near establishments like Gherkin’s Sandwich Shop, Ocean View Inn, and the store Tidepool.
Owner Nicholas Lee tells What Now San Francisco that it all started about seven years ago, on a trip to New Zealand with his now-wife: “While we were there, I fell in love with the pie shop culture.”
Upon their return, he developed the concept for Sage Bakehouse, as well as his “top secret” dough recipe, and began selling at Clement Street Farmers Market. Lee shares that the business experienced a “phenomenal reception” — “We started with maybe 50 pies and sold out within the first hour,” he shares.
Over the last year, Lee has been focused on increasing production capabilities while working in the Elegant Cheesecakes kitchen at 103 Harvard Avenue in Half Moon Bay. While all of the pies are still made from scratch, he recently imported a “pie-making machine” from Australia, which he hopes will help him go from baking 1000 pies a week to 2000.
“I’ve been looking for a place where we could have a home for people to visit us,” Lee shares. So, when the Here Comes the Sun space became available, he seized the opportunity and purchased the building — which will offer about 10-12 seats indoors and an additional 20 on the patio once it’s up and running.
Lee shares that Sage Bakehouse in Montara is slated to open, ideally, “before Memorial Day.” In the meantime, find the Sage Bakehouse food truck at the Montara address.
