Broma Opens Bringing Bold Mediterranean Flavors Of Spain and Portugal

Inspired by travels, Michelin-starred Chef Jarad Gallagher serves elevated menus driven by hyper-seasonality

Located within the Shashi Hotel in Mountain View, CA, BROMA is a casual, yet refined Spanish-Portuguese focused Mediterranean restaurant from the team behind the popular craft cocktail bar The Emerald Hour. Taking inspiration from Michelin-starred Chef Jarad Gallagher’s travels through the Iberian peninsula, the restaurant will feature a special prix fixe menu focused around hyper-seasonal ingredients priced between $74-$120 (excluding a 20% service charge), in addition to shareable appetizers and a selection of la carte entrées.

Diners can expect bold flavors and diverse ingredients throughout their culinary journey at BROMA. Fusing the flavors of Spain and Portugal with fresh, local ingredients, BROMA offers a refreshing addition to Mountain View and the surrounding Silicon Valley dining scene.

“When I first traveled through Spain and Portugal, I was in awe of their rich and vibrant cultures. I instantly felt inspired by the bold, hearty cuisine and the passion for artistry. My heart is in Spain and my soul is in Portugal and the incredible food in that region of the world continues to motivate me to cook. When people dine at BROMA I want them to feel transported and inspired, without the unnecessary formality of fine dining” said Jarad Gallagher, Executive Chef of Broma in a statement.

BROMA’s culinary team is led in collaboration with Chef Jarad Gallagher and Executive Chef Aubree Arndt, while Justin Rodriguez leads the beverage program and overall restaurant operations. Gallagher and Rodriguez have previously teamed up on the Michelin-starred contemporary French restaurant Chez TJ in Mountain View, CA. Chef Gallagher provides the overarching culinary inspiration and creative direction for BROMA, expertly executed by Executive Chef Aubree Arndt and their talented team of chefs, 40% of which are female.

The restaurant’s inception was the result of Gallagher and Rodriguez identifying a need within the Peninsula’s dining scene for an elevated tasting menu experience offered at an accessible price and within a scaled-down time frame. The la carte menu at BROMA features an approachable array of starters, entrées and desserts designed to delight a variety of palates and dietary preferences. Rotating daily, the special prix fixe menu is an expression of Chef Gallagher and Chef Arndt’s collaborative ingenuity. Prix fixe menus are driven by hyper-seasonal ingredients sourced locally and abroad and focused on providing an elevated yet swift dining experience.

Current a la carte menu highlights include:

  • Croquetas de Pollo e Manchego – curtido, guajillo chile, jamon iberico
  • Hamachi Crudo – plum, bay leaf, kumquat, avocado
  • Spanish Octopus – corn, tomato, chili glaze
  • Alentejo Pork Cheek & Calms – kimchi, potato, spinach
  • Flannery Beef Dry-Aged New York Steak – ramp, potato, fava bean
  • Crema Catalana – mixed local fruits
  • Valrhona Manjari Mousse – chili sponge cake, pecans, sea salt

The beverage program at BROMA, led by Justin Rodriguez, builds off of the popularity of The Emerald Hour and features playfully curated cocktails based on fresh, seasonal ingredients and house-made bitters and mixers.

The menu features creative spins on mezcal, tequila and gin-based cocktails. Experiments with inventive bitters, fresh fruit mixers and Spanish ingredients like olive oil and sherry will keep cocktail aficionado’s palates entertained. The menu will also feature craft beer, American and International wines, sangrias and a variety of non-alcoholic options.

Highlights include:

  • G&T: st. george botanivore, cinchona bark syrup, yuzu elderflower tincture, fever tree indian tonic
  • Paloma: blanco tequila “milk punch,” grapefruit, soda, ginger
  • Coffee Martini: wheatley vodka w/cocoa nib, st. george nola, california sherry, orgeat, cold brew
  • Old Fashioned: woodford reserve, house-made orange bitters, charred cherry wood
  • Zero Proof Housemade Sodas: blood orange , grapefruit, ginger-lime

Situated in the heart of Silicon Valley and surrounded by notable tech campuses such as Google, Microsoft, and Intuit, BROMA provides an elevated and serene escape from the daily grind. The 13,000-square-foot restaurant features private rooms, two patios and imported artwork. The restaurant’s outdoor patio seating and lounge area will double as the perfect ambiance for friends, families and travelers alike to take advantage of the incredible weather and lengthened summer evenings – a perfect spot to sip, taste, and linger.
