Thursday, August 29th marks the return of Cow Hollow’s establishment, The Brixton, signaling a vibrant new beginning as the neighborhood gem reopens its doors after a transformation. Embracing its roots as a modern American gastropub, The Brixton reemerges as not just a restaurant but a social gathering hub.

Following shifts during the pandemic, owner & operator Hugo Gamboa aims to return the restaurant to its original restaurant focus, pivoting back to food while still maintaining a fun bar atmosphere.

“This refresh has been a goal of ours for a long time,” says Gamboa in a statement. “At the onset of the pandemic, our team made the decision to shift The Brixton to more of a bar concept in order to survive. Now, we are eager to embrace our roots as a restaurant with an exciting bar program, and a place where the community is welcome to gather and enjoy this great city and Cow Hollow neighborhood, which we are so proud to see having a resurgence with new openings.”

Under the expert guidance of Consulting Chef Joey Altman, known for his culinary prowess at Hazies in Hayes Valley, The Brixton will unveil a reimagined menu that celebrates ingredient-driven simplicity and bold, vibrant flavors. With an emphasis on fresh, high-quality ingredients, the revamped culinary offerings at The Brixton combine American gastropub classics with a modern twist.

The new menu was created to support the idea of a neighborhood spot where people will come together for happy hour or dinner, only to end up staying for drinks through the night. While the vibes are high and the menu filled with classics, don’t underestimate the knockout flavors of this new menu created by Chef Altman. From small shareable plates to famed burgers, sushi and sashimi, salads and main courses, there is something for everyone. Sample dishes include:

  • Pan Roasted Organic Chicken Breast (Sonoma Chicken breast served on Arugula & hearts of palm with a lemon-caper sauce)
  • Osaka Style Sushi Stacks (made in the classic wooden press molds used in Japan’s Osaka region)
  • Brixton Super Smash Burger (2 3-oz beef patties cooked on our plancha with shaved sweet onion and topped with American cheese. All on a warm sesame brioche bun and shredded romaine) 
  • Korean BBQ Ribs (Kalbi style short ribs are braised, grilled then glazed with a tangy Asian pear reduction with tamari & mirin)
  • Huevos Rancheros (crispy corn tortillas, two over easy eggs, ancho-chile tomato sauce, smashed avocado & queso fresco)

To complement the new menu at The Brixton, Beverage Director Victor Pichardo has curated an all-new beverage program featuring expertly crafted takes on classics that are both approachable and elevated. From the clear spirits spotlight, highlighting the tantalizing nuances of gin, to the carefully curated selection of craft beers and wine program predominantly featuring Californian varietals, or even a selection on N/A cocktails, all can find a beverage of choice. Sample cocktails include:

  • Oh She Sour (Honeydew & Cucumber Infused Japanese Gin, Lemon, Simple, Egg white)
  • Gin & Chronic Spritz (Lavender & Hemp Infused Gin, Lemon, Prosecco)
  • Be My Baby (Jalapeño & Habanero Infused Tequila, Alma Tepec Liquor, Fresh Cucumber Juice, Lime, Chili Oil)
  • Baby’s Milk (Gin, Citrus, Pineapple, Fruity Pebbles, Strawberries, Milk Washed)

The Brixton’s reimagined space is the product of a collaboration with the Parisa O’Connell Studio. Guests can prepare to be welcomed by a seamless blend of modern elegance and rock ‘n’ roll, which originally made the location beloved. While the black & white photography paying homage to music and rock culture still hang on the walls, the space is now a bit brighter and lighter and now has new chandeliers inspired by London pubs and black tufted banquettes, creating a chic and inviting ambiance but with a slight edge.

The redesigned interior of The Brixton features more floor seating. While the blade sign remains a fixture outside, the interior décor seamlessly marries the edgy with the elegant, offering a stylish and inviting space.

Becoming a community hub has been front and center to this redesign, and with that in mind, Gamboa and The Brixton team wanted to create an incentive to keep coming back. Welcome “Members Only”, a limited run membership card that will give access to exclusive events, priority reservations, exclusive tasting experiences, cocktail classes & omakase dinners and more. The entire goal of the program is to create a community of regulars in the neighborhood. In fact, costing only $199 for the year, the card will also provide holders with a weekly $30 food & beverage credit for the year, a complimentary dessert at every reservation (valued at over $1,500).
