Flybird, the popular fried chicken joint from Sababa chef Guy Eshel, is preparing to soar to delicious new heights.
Flybird began back in 2019, when Eshel teamed up with his business partner and fellow chef Jay Roberts to bring a new style of fried chicken to San Francisco. Growing up in Israel, Eshel was surrounded by chicken schnitzel. He realized that every culture seemed to have its own take on fried chicken and soon set out on a mission to see what unites and divides fried chicken across the globe.
When Flybird first launched in 2019 they specialized in quick-service fried chicken with an international flair, offering traditional Isreali chicken schnitzel alongside specialties like Korean “Seoul Food” chicken and Provençal chicken with arugula and chèvre. Now, having secured a new lease at 1 Blackfield Drive in Tiburon, Guy and his team are preparing some significant additions to their menu.
Flybird’s Tiburon location will be their biggest yet and will feature an expanded kitchen and even more dine-in space for customers. The opportunities provided by the new kitchen enable Guy to add new signature dishes to his menu like rotisserie chicken, matzo soup, salads, and breakfast – a first for the young restaurant. The Tiburon location will also be more welcoming to children and families, offering a new kid’s menu alongside a fresh selection of soft serve ice cream.
The menu expansion is a significant step forward for the fledgling chicken joint and fuses fast-food convenience with a traditional dine-in experience. Don’t worry though, the upgraded menu won’t change the experience. Guy still promises to offer the same speedy service that customers have come to expect.
Guy was able to confirm with What Now San Francisco that the team is aiming for a mid-September grand opening. In the meantime, be sure to visit the original Flybird at 35 Kearny Street to see what Flybird has to offer.
