Chotto Matte Unveils Stunning Plans For First West-Coast Restaurant

Elegant rooftop dining will be coming to Union Square next year.

Chotto Matte is causing quite a stir in the world of fine dining. The brainchild of restaurateur par excellence Kurt Zdesar, Chotto Matte has quickly established itself as one of the most influential international restaurants in the industry, and it’s finally coming to the West Coast.

Blatteis & Schnur Inc. recently announced the execution of a lease with Chotto Matte for a rooftop dining experience at 100 Stockton Street. The former home of Macy’s Men’s department store, 100 Stockton is currently undergoing a massive renovation from one of the the world’s leading architectural firms, Gensler. With over 250,000 square feet of mixed-use space on eight levels, 100 Stockton is expected to be Union Square’s premiere location for flagship retail, creative office spaces, and expansive event areas.

Topping it off, quite literally, will be Chotto Matte – the crown jewel of 100 Stockton. Occupying the rooftop and featuring dramatic vistas of the city, Chotto Matte will be designed by Andy Martin Architecture and will offer over 14,000 square feet of space, including a 3,000 square-foot terrace for open-air dining. For context, this would be over twice the size of the original Chotto matte in London, which features 6,000 square feet of space.

Chotto Matte began back in 2013 when Kurt Zdesar wanted to introduce audiences to a style of food called Nikkei. Described as a fusion between Peruvian and Japanese cuisines, Nikkei cuisine features “bold, eye-catching natural colours” and “mouth-watering taste sensations.” Nikkei cuisine prioritizes fresh fish and seasonal ingredients, combining traditional ceviche and sushi recipes into something entirely new.

Kurt Zdesar has been working in the restaurant industry since 1988. Starting out as a teenager working at a McDonald’s and KFC, he quickly climbed the ranks of restaurant prestige and eventually found himself running the European expansion of Nobu, establishing their first restaurant in London an earning a Michelin star within the first year of operation. When he established Chotto Matte in London, it was an overnight hit. With two other locations in Miami and Toronto, and three more slated for Doha, Riyadh, and Dubai, Chotto Matte is becoming the place to be.

Chotto Matte is expected to begin operation later in 2022. Blatteis & Schnur are thrilled to have a restaurant of Chotto Matte’s caliber coming to Union Square, and the new deal is expected to bring a lot of new business to 100 Stockton. There’s still a lot of work that needs to be done to redevelop the building, but once the work is finished locals will be in for a treat.
