Chef Charlie Palmer and Four Seasons veteran Christopher Hunsberger have combined their culinary and hospitality expertise to create Appellation, a hotel group that will debut in Healdsburg. The group will break ground on an eight-acre property at 16977 Healdsburg Ave. in anticipation of a 2023 opening.
Appellation aims to be a high-quality hotel providing amenities and experiences for the modern-day traveler. “We believe there are people who want the amenities of the five-star experience in a more approachable and affordable way,” Hunsherger tells San Francisco Chronicle, stating that room rates will be at least half the price of other local five-star stays.
The property will feature flourishing orchards and gardens, plus 108 rooms outfitted with pantries featuring coffee, snacks, and cocktail supplies in place of a minibar. 4,700 square-feet will be dedicated to the food and beverage offerings, which will include a restaurant and rooftop bar helmed by Palmer.
The restaurant itself will attract Healdsburg locals, featuring a menu that centers around Palmer’s relationships with local farmers and the produce he grows for his own restaurants. The hotel amenities will also include a spa, fitness center, two pools, walking trails, plus classes and demonstrations hosted by winemakers, butchers, coffee roasters, and other local makers.
Following the Healdsburg hotel will be outposts in Pacific Grove and Sun Valley, Idaho. The Pacific Grove location will be the largest project with 225 rooms within walking distance to Monterey Bay Aquarium and is set to open in 2024. The Sun Valley hotel will be a skiing and outdoor destination scheduled to open in 2025.
